Breakfast Quiche

1 - 9" pie shell, unbaked
1/2 lb sausage, cooked & drained 
2 cups cheddar cheese, shredded
2 cups potatoes; raw, shredded & rinsed in cold water
5 eggs, well beaten
salt & pepper to taste

Spread sausage evenly in the bottom of pie shell. Sprinkle cheese, then 
potatoes over the sausage. Pour eggs over everything.  Bake at 425 degrees 
for 5 minutes, then reduce heat to 375 and bake 45-60 minutes. It will be 
lightly browned and well set.
