Cheese Grits

3/4 c. quick grits (not instant)
3 cups water
to taste: salt, black pepper, cayenne pepper
2 tbsp. butter
1 c. extra sharp cheddar cheese, grated

Bring water to a boil, slowly stir in grits and seasonings. Reduce heat
to medium-low; cover. Cook 5 to 7 minutes, or until thickened, stirring
occasionally. Add butter and cheese and stir through until melted. Makes
4 servings (or 2 if you live in my house!).
