Bacon and Egg Breakfast Bake

4 oz. fully cooked Canadian bacon or ham cut in small cubes
1/2 cup (2oz.) finely chopped Cheddar or Monterey Jack cheese
4 large eggs
1 1/2 cups milk
1/8 tsp. pepper
Heat oven to 450°. Spread bacon in the bottom of a 9" pie plate and sprinkle
with cheese. Beat eggs with the milk and pepper and pour over cheese. Bake
15 minutes. Reduce heat to 350° and bake 10 to 15 minutes longer until
browned and puffed in the center. Place pie plate on a wire rack to cool for
10 minutes before cutting in wedges to serve. Makes 4 large servings.
