Bacon and Egg Breakfast Bake

4 oz. fully cooked Canadian bacon or ham cut in small cubes
1/2 cup (2oz.) finely chopped Cheddar or Monterey Jack cheese
4 large eggs
1 1/2 cups milk
1/8 tsp. pepper

Heat oven to 450. Spread bacon in the bottom of a 9" pie plate and sprinkle
with cheese. Beat eggs with the milk and pepper and pour over cheese. Bake
15 minutes. Reduce heat to 350 and bake 10 to 15 minutes longer until
browned and puffed in the center. Place pie plate on a wire rack to cool for
10 minutes before cutting in wedges to serve. Makes 4 large servings.
