Sugarless Cake

2 c. raisins
2 c. water
6 pks Sweet 'n Low
2 eggs or equivalent egg substitute
1/4 c. oil
1 3/4 c. unsweetened applesauce
2 c. all-purpose flour
2 t. soda
1 t. cinnamon
1 t. nutmeg
1 t. vanilla (or black walnut flavoring)
1/2 c. nuts (optional)

Mix first two ingredients together and cook 10 minutes. Cool
and then drain water, reserving raisins.
(I microwaved 5 minutes on HIGH.)

Mix raisins and remaining ingredients together. Pour into
greased & floured Bundt pan. Bake in pre-heated 350 degree
oven until done (about 35 minutes). Can add 1/2 c. nuts
and/or substitute black walnut flavoring for vanilla.
