Rice Raisin Pudding

1 4-oz. JELL-O sugar-free vanilla cook & serve pudding mix
2 c. skim milk
1/2 c. raisins
2/3 c. uncooked instant rice

In 8-cup glass measuring bowl, combine dry pudding mix
and skim milk. Mix well using a wire whisk. Stir in raisins
and rice. Cover and microwave on high 6 to 7 minutes,
stirring every 2 minutes. Place bowl on a wire rack and let
set 2 to 3 minutes. Mix well. Evenly spoon mixture into 4
dessert dishes. Serve warm or cold.

6 g protein, 36 g carbohydrates
