Quick-mix Muffins

This batter can be made in advance and refrigerated up to 2 weeks.

3 1/2 cups Raisin Bran cereal
2 1/2 cups all-purpose flour
1 cup sugar
1 tsp. baking soda
1 tsp. salt
2 eggs, beaten
2 cups buttermilk
1/2 cup vegetable oil

In a large mixing bowl, combine the cereal, flour, sugar, baking soda,
and salt. Add the egss, buttermilk, and oil, stirring just until
thoroughly mixed.

Heat the oven to 400. Grease the bottoms of 18 muffin cups (or line
them with cupcake papers) and fill them with batter. Bake for 15 to 20
minutes, until done.
