Black Bean Ole!

1 c chopped onion
3/4 c Yellow corn meal
2 t chili powder
1 c evaporated skim milk
1/4 c water
16 oz whole kernel corn
1 lb black beans, canned (or softened dry beans)
1 lb canned, stewed tomatord
4 oz canned chilies, diced (we used fresh red chilis from the garden and
though a bit hotter, they worked fine, wear gloves when you dice them!)

Preheat oven to 350.
Lightly spray an 8" square baking pan.
In large bowl cmobine all ingredients.
mix well.
place in prepared pan.
bake uncovered 45minutes.

**note, I like to top this with a mixture of salsa and sour cream!**
