Penne Pasta with Italian Sausage, Tomato and Herbs

1 lb hot Italian sausage
1 lb penne pasta
1 tsp veg oil
1 large onion, chopped
3 cloves garlic, minced
1 can (28 oz) tomatoes (undrained, chopped)
2 tsp basil
1 tsp oregano
1/2 cup chopped fresh parsley
2 tsp parmesan cheese (opt.)
Cook sausage 10-15 minutes per side in skillet, drain and cut into slices.
Cook pasta until tender, but firm.
Heat oil over medium heat and cook onion until tender. Add garlic,
tomaotes, basil and oregano and simmer uncovered for 10 minutes.
Add sausage, pour over pasta and toss. Garnish with cheese if desired.
