Banana Cake with Orange Icing

1/4 cup soft margarine
3/4 cup granulated sugar
2 eggs
1 tsp vanilla
1 cup mashed ripe bananas (about 3)
1 tsp grated orange rind (optional)
2 cups all purpose flour
2 tsp baking powder
1 tsp baking soda
1/2 cup buttermilk or sour milk *see note below

Orange Icing
1 1/2 cup icing sugar
2 tbsp low fat yogurt
1 tsp grated orange rind
1 tsp orange juice

In bowl, cream margarine; add sugar and beat well.  Add eggs one at a
time, beating well after each addition.  Beat in vanilla, bananas, and
orange rind (if using).

Mix together flour, baking powder and baking soda; beat into egg mixture
alternately with buttermilk.  Spray 9-inch (2.5L) spring form or square
pan with nonstick coating; spoon in batter.  I used a loaf pan.

Bake in 350F oven for 40 minutes or until cake springs back when pressed
in center or until tester inserted in center comes out clean.  Let cool
in pan for 10 minutes; remove from pan and let cool on rack.

Orange icing:  In small bowl, combine sugar, yogurt, orange rind, and
juice; mix until smooth.  Spread over cake.  Cut into wedges.  Makes 12
servings

*To sour milk, add 2 tsp lemon juice or vinegar to 1/2 cup milk and let
stand for 10 minutes.
