Cranberry Sauce

2 cups water
2 cups sugar
4 cups fresh cranberries (get organic if you can find them - the regular
ones have lots of weird junk sprayed on them)
zest of one orange (ditto on the organic recommendation)
1 cinnamon stick

Combine the water, orange zest, cinnamon stick and sugar in a pan, bring
to a boil.  Add washed and sorted cranberries, bring to boil again, lower
heat and simmer 5 minutes or so til thick and nice.   This leaves the
berries somewhat whole, if you like it more homogenized, just cook a few
minutes more - just be careful not to let it burn.

Pour into a glass container (metal is ICKY!!) and refrigerate.  You can
make this a couple of weeks ahead, and it freezes pretty well too.
